Water is used every day to wash, rinse, dissolve, dilute, heat, cook, cool... As a thermal fluid for utilities, as an ingredient and raw material, water is at the heart of all industrial processes. These realities are linked to the exceptional properties of water as a fluid.
Water is made up of one oxygen atom (O) and two hydrogen atoms (H). As the electronegativity of the oxygen atom is greater than that of the hydrogen atom, the O-H bonds are polarized, which, due to its angled shape, leads to polarization of the molecule (figure
