Starch raw materials include corn, sorghum, wheat, tapioca and rice.
From an economic point of view, starch offers two advantages:
for human and animal nutrition, in which it plays an essential role; in particular, it is the main component of flour;
for industry, which transforms it by physical, chemical or biological processes into specific starches (modified starch, cationic starch, anionic starch, etc.) and a number of by-products, such as glucose syrups, maltodextrins, mannitol, ethanol and sorbitol.
