5. Storage problems
The microbiological preservation of hydrolats and floral waters
is a major problem that limits the use of these extracts.
They are highly vulnerable to fungal and bacterial contamination,
due to the aqueous nature of the medium, the possible presence of
plant fragments and the low content of organic compounds (some of
which may have bactericidal and/or bacteriostatic properties). Such
