In addition to air and water, a number of other components are essential to the manufacture of ice cream and gelato: these include fats and milk proteins, sugars, additives, chocolate and cocoa, fruit, egg products, alcohols and other flavoring ingredients. Each raw material is chosen because it has a particular characteristic that makes it essential to the mix.
