The list of conceivable ingredients for the wide variety of products that can be manufactured is very extensive, ranging from a minimum of five to over twenty for composite products (multilayers, markers, coulis, etc.) (figure 1). In fact, the choices made for each of them will correspond to levels of quality adapted to their market positioning, from entry-level products to top-of-the-range frozen desserts with little expansion and made exclusively with natural ingredients and therefore without additives.
