ABSTRACT
A large number of toxins can contaminate food. Among these contaminants, the okadaic acid, aflatoxin M1 and ochratoxin A are known for their high toxicity and their omnipresence in food products. Tests and biosensors have therefore been developed for their detection. The need for fast, reliable, specific and inexpensive analytical methods is a major concern for the food industry in order to ensure the safety of commercialized products.
