Exopolysaccharide production
Biotechnological production of bacterial exopolysaccharides and applications in cosmetics

This production is generally carried out in two phases:

• a laboratory phase to obtain sufficient quantities of biopolymers to determine their chemical composition and main physico-chemical, rheological and biological characteristics;

• a transfer phase, preceded by optimization work, towards industrial production ranging from 500 L fermenters to volumes > 10 m ³ (or even 30 to 50 m ³ ) (figure 7 ).
