4. Multiple emulsions and Pickering emulsions
Multiple emulsions are emulsions in which the dispersed phase is itself made up of drops (these drops can contain other drops up to an order "n"). Thus, a multiple emulsion of order 2 is a so-called double emulsion, which can be either an E1/H/E2 emulsion if the continuous phase is water or an H1/E/H2 emulsion if the continuous phase is oil. The double emulsion E1/H/E2 can also be seen as two aqueous phases separated by an oily intermediate phase, a kind of "membrane" that can be used for the controlled release of drugs or active ingredients, for example. The potential applications of multiple emulsions are vast: in encapsulation, as a "matrix" for materials synthesis or in separation processes among others...
