"Food safety" is sometimes replaced by "food security", a term which can be a source of confusion, as it refers to the security of the food supply. "Sécurité sanitaire des aliments" actually stands for "food safety", sometimes translated as "salubrity".
Food safety is a major issue (Conseil économique et social, 2001). It is first and foremost a public health issue.
