The native polymer synthesized by the bacteria has no rheological properties relevant to industrial applications. It is the heat treatment that induces a functionality enabling various applications.
Depending on the gel strength of the polymer back into solution, a range of products with applications in various economic sectors can be developed.
5.1 Cosmetics

When gentle heat treatment is applied to the fermenting wort, the polymer is denatured and very partially hydrolyzed. . In solution and in the presence of salt, it forms a strong gel that is used in cosmetics as an anti-dark circle patch.
