The first processing stages, which are carried out in the countries where the cocoa plantations are located (figure 3), produce working cocoa (fermented and dried cocoa beans) from the pods. This is then transformed into semi-finished products: cocoa butter, cocoa powder, cocoa paste/mass (figure 4). Chocolate production is the ultimate transformation of these semi-finished products, in association with sugar and possibly milk powder (milk and white chocolate), during a formulation operation (figure 5).
