Coffee belongs to the Rubiaceae family and to the Coffea genus, in which there are two different species:

• Arabica, which only grows at altitude, from 600 m to 2,000 m. It includes some fifteen varieties with well-known names, such as Bourbon, Maragogype, Mokka, etc. (table 2 ). Arabica beans are long and wide, rather flat, with a sinuous central furrow and sometimes a bluish color (figure 3 ).
