4. Traceability
Traceability is one of the essential tools for controlling food safety .
It has long been used by companies to manage inventory and optimize production. More recently, it has become a quality and risk management tool. Increasingly, consumers want to know where a product comes from and how it is made.
European food safety regulations – regulation no. 178/2002 of 28/01/02 – define traceability as follows:
"the ability to trace foodstuffs, food-producing animals...
