1. Enzyme structures and activities
While the industrial use of enzymes initially developed largely as a result of their interest in laundry detergents (which remains one of their major outlets in quantitative terms), their systematic use to improve the properties of foodstuffs dates back less than half a century. Figure 1 shows the diversity of food uses for enzymes authorized by the Order of October 19, 2006.
