Cossette; cossette
Beet cut into small pieces shaped like a roof.
Calco-carbonic purification
Juice clarification is achieved by gradually adding slaked lime [Ca(OH)2] during pre-liming to form bonds with impurities, followed by liming to introduce excess lime, and finally by precipitating the lime during carbonation with CO2-rich gas bubbling.
Preheating; preliming
Gradual addition of slaked lime [Ca(OH)2] to form bonds with the impurities.
Liming
Add a large amount of slaked lime [Ca(OH)2] to ensure there is an excess of lime.
Carbonation; carbonation
Bubbling of CO2-rich gas from a lime kiln to precipitate excess lime as CaCO3. The precipitate is called "sludge."
Foam; scum
Once the sludge has been washed and dried, it is called "scum."
