4. Characteristics and properties of the final product
Vinegars are said to have special properties due to the acetic acid they contain. For example, acetic acid may have a similar effect to Metformin, the main drug prescribed for the treatment of type 2 diabetes, by improving insulin sensitivity in diabetics. Vinegar may also have a slight slimming effect, and help combat gastro-oesophageal reflux.
However, it does have some digestive drawbacks, such as slowing gastric emptying in patients with gastroparesis and diabetic complications. Excessive consumption of vinegar can sharply lower blood potassium levels and induce osteoporosis mechanisms. Finally, food acids can damage tooth enamel.
