3. Drying by immersion frying
When immersing a wet product in a hot oil bath, assuming qoil > qeb of the product at a fixed ptot, the product receives heat by convection from the hot oil bath (figure 4). But as there is no potential for external diffusion of water vapor from the product to the oil, the heat received is used first to heat the wet product, until it boils, starting with the hottest outer surface. The steam is then emitted at the total pressure ptot prevailing around the product, i.e. that of the atmosphere above the bath plus the hydrostatic charge of the oil bath as a function of immersion depth, a charge that may be negligible.
