Can we observe usage by reconstituting a realistic laboratory environment?

No, because it's not just the environment in which you're using the device, it's the person's conditioning at the moment they access the scene you're observing that determines their behavior. It's impossible to reconstitute these conditions in the laboratory.

Do you have to observe a very large number of people to be sure of the results?

No, this approach is based on qualitative rather than quantitative analysis. As a general rule, observing 15 to 20 people in a situation will cover more than 80% of usage cases. The most important thing is to decipher these usage sequences with a view to understanding customers' mental patterns.
