Many industrial applications involve the use of mixtures of two or more pure substances. Boiling is widely used for mixtures for the purpose of body separation, e.g. for solvent recovery, seawater distillation, petrochemical processes, etc. In mixtures, heat and mass transfer are closely linked, which generally slows down interfacial mass transfer. Even for the simplest mixtures, i.e. binary mixtures, the phase change mechanisms are complex, making it difficult to predict heat transfer. Although in most cases the exchange coefficients are reduced compared with pure bodies, improvements are possible for certain fluids.
