It is the incoming inspection that enables us to approve a perishable foodstuff, which may have been altered by unsuitable transport. Pre-shipment inspection at the supplier's premises is also important, but cannot replace it. In most cases, this approval takes place at each delivery. The incoming inspection plan is flexible, and the frequency can vary according to the sensitivity of the material, the history of relations with the supplier, etc.

Some controls can only be carried out on an ad hoc basis, regularly at the start of the marketing year, as is the case for cereals, or exceptionally in the event of a particular event: measurement of radioelements following the Fukushima accident, species identification during the horsemeat...
