3. Conclusions
A pollutant load diagnostic is proposed for the winery. The conditions under which samples are taken are very important. Please note: the recommendations are based on five series of observations for red winemaking in Gironde. Before using the diagnosis, the approach must be adapted using data obtained on a site comparable to the one studied in terms of oenological activities.
