3. Implementation

  • Step 1 – Reception, sorting and calibration

    After reception, eggs are sorted and graded. When destined for the shell egg sector (grade A eggs: fresh eggs, intended for consumers, neither washed nor cleaned, with an inner tube height of 6 mm or less), they are graded according to the following weight categories:

    • XL for very large eggs weighing 73 g or more;

    • L for large eggs weighing 63 g or more but less than 73 g ;

    • M for eggs weighing 53 g or more but less than 63 g ;

    • S for small eggs weighing less than 53 g.

    Downgraded eggs (incorrect size, cracked shell, visual defects, etc.) are sent to the egg products sector.
