The standard French (and even European) charcuterie pig is a young animal (around 170 days old) with a live weight of between 105 and 115 kg after an 18-hour fasting period if possible, or better still 24 hours $\left(\text{toujours}⩾12\text{h}\right)$ before slaughter.
