The same applies to these bioprocesses as to the structure of the human brain. In the case of the latter, it is made up of three successive layers: the archaeocortex, which enables us to meet our basic vital needs, the paleocortex, which is the site of experience acquisition, and the neocortex, which enables perception, expression, movement and, in humans, thought and language. Similarly, if we transpose this classification to bioprocesses, we have archaea-bioprocesses, paleo-bioprocesses and neo-bioprocesses. Archaeo-bioprocesses have been used since the dawn of mankind, in a totally empirical way, to meet the fundamental need of transforming resources of natural, plant and animal origin into food and beverages, to ensure the efficient preservation of foodstuffs (for example, through fermentation, with the production of fermented beverages such as wine and beer), and to improve their organoleptic...
