Non-Newtonian fluids are materials whose mechanical properties depend non-linearly on the mechanical energy (shear, for example) applied to them, and possibly on time. The widely accepted structural hypothesis is that the sources of these non-linearities lie in a modification of the internal organization of the structure of these media.
Examples
When particles form clusters, they trap fluid "trapped" in the interstices. If sufficient shear energy is applied to the clusters, they can be broken or eroded. The trapped fluid is then partially released, and the fluid-particle combination becomes less viscous.
