2.1 Highly concentrated emulsions
An emulsion is considered highly concentrated when the volume of the internal phase (Φ) represents more than 74% of the total volume. This threshold corresponds to the maximum volume occupied by uniform spherical water droplets arranged in such a way that they do not undergo deformation. Above 74%, the drops deform to occupy as much space as possible. These concentrated emulsions are subsequently called HIPE (High Internal Phase Emulsion).
