3.1 Sampling
Among the various crucibles on the market (figure 3 ), those used to study dehydrated food products have a volume of the order of 10 to 100 µL and are made of aluminum, anodized aluminum or stainless steel. Those used in calorimeters operating at temperature programming speeds of less than 2°C · min –1 have larger volumes (500 µL to 1,500 µL) and are either hastelloy crucibles or glass capillaries.
