Bioavailability; Bioaccessibility

Refers to the accessible fraction of a substance in a given matrix (soil, food, plants, etc.) that can be released into (human) gastrointestinal juices and thus absorbed into the body, potentially causing certain effects. It depends on the substance and its form (speciation for metals) as well as on the characteristics of the matrices (e.g., organic matter content, etc.).
