INTRODUCTION
Our knowledge of the physical and chemical properties of fluids in general leads us to define the characteristics of drinking water very precisely. Mineral content, salinity, alkalinity, bacteriological density: to these criteria, which are set out in standards, we can add taste, odor and color for the water we ingest. For a complete overview of fluids, we should also mention food fluids, rainwater and heat transfer fluids (sanitary and heating water). Medical fluids (nitrogen, oxygen, compressed air, etc.) must also meet extremely well-defined specifications.
