The first biopreservation trials using marine lactic acid bacteria date back to the mid-1990s, with tests carried out on fresh whiting in two Nantes laboratories belonging to Ifremer and Oniris (formerly ENITIAA), which were unfortunately unsuccessful (unpublished data). More encouraging studies soon followed, notably on smoked salmon, with improved sensory quality
