3. Technological alternative
In brewing, FT can be used as a technological alternative in 4 applications:
wort separation (after stirring) ;
clarification of the beer ;
production of alcohol-free beer or dealcoholization ;
cold sterilization of clarified beer before packaging.
3.1 Separating the mash
Mashing, followed by brewing, is a solid/liquid extraction that represents the initial stage in brewing. The aim of brewing is to extract (solubilize) as much extract as possible, of the highest possible quality, from the pre-ground malt and raw grains. It's a fairly complex operation, and the operating modifications (dilution, temperature, duration of stages, pH, etc.) are defined according to the type of raw material.
