Food systems, i.e. the way in which humans organize themselves in space and time to obtain and consume their food , must make the transition to greater sustainability. The main sustainability issues to be addressed are summarized in figure 1, which specifies which stage of the chain, from production to consumption, these issues relate to in particular.
