5. Regulatory framework
The characteristics of oils and their production and transformation
processes are governed by French and European regulations, as well
as by international trade standards (IOC International Olive Oil Council
standards for olive and olive-pomace oils, and Codex Alimentarius
standards for edible oils and fats).
The regulatory provisions are structured along two lines:
one vertical: oilseeds, oils and fats, olive oils, margarines,
refining processes;
the other horizontal: GMOs, extraction solvents, additives,
contaminants...
Olive oil benefits from special international (IOC and Codex trade
standards), European and national regulations.
