Tomato Ketchup is a homogeneous suspension-type condiment sauce obtained from clean, healthy, ripe tomatoes (Lycopersicum esculentum), from which the skin and seeds have been removed, and from tomato by-products, including concentrate with added vinegar, sugar, salt and aromatic ingredients and extracts such as onions, spices and authorized additives. The minimum dry extract content of tomatoes is only 5-6%, which requires considerable prior concentration.
