3. Different types of oysters
The tide sets the pace for the oyster farmers' work, since the oyster beds are located on the foreshore, the area uncovered when the sea recedes. Just before low tide, they go out onto the foreshore in fast, flat-bottomed boats, to visit the oyster beds and remove the oysters from the tables where the bags of oysters are lined up. The State leases the plots to the oyster farmers, and concessions are renewable every 35 years (see
