Sustainable Food
Food that is healthy, has a low environmental impact, is socio-culturally acceptable, and is economically accessible to all.
Plant-based alternatives to meat
Food products made from plant-based ingredients, formulated and processed to replicate all or some of the sensory, functional, and nutritional attributes of meat (texture, taste, appearance, culinary uses).
Plant-based analogs
Food products made from plant-based ingredients (soy protein, peas, wheat, etc.) designed to mimic the sensory and functional characteristics of meat.
Bioavailability
The proportion of an ingested nutrient that is absorbed by the intestinal mucosa and is therefore likely to be available to meet the body’s needs. Bioavailability depends on the physiological processes that allow exogenous molecules (particularly nutrients) to reach their target.
