HACCP method ? A practical approach

This is the first of the five preliminary steps. For the authors of this article, it is one of the key steps in the method. Beyond simply forming the team, it is very important that the facility’s management be involved in the HACCP process, particularly—but not exclusively—regarding the human and financial resources that implementation may require. Ideally, this should be accompanied by a letter of assignment or a formal commitment from management, reiterating that the implementation of the seven principles is mandatory (Table 1).
