5. Step 5: On-site verification of the process flowchart
This step is primarily intended to verify that there are no major omissions in the documents prepared during the previous steps (product and process audits, flow charts, etc.). It is important that this verification be conducted by the entire HACCP team, covering all stages and all associated information, under actual manufacturing conditions. The team may use a verification checklist; once the checklist is fully completed, the team can proceed to the next step (hazard analysis). This step also involves verifying the operators’ level of understanding and application of certain procedures, work instructions, and other operating procedures.
