Beer
Beverage obtained by alcoholic fermentation of a wort prepared from cereal malt (50% by weight), cereal raw materials, edible sugars and hops. Aromatic herbs or natural spices may be added.
Brewing
A set of operations enabling the hydrolysis of starch, complemented by other physico-chemical transformations.
Spent grains
Solid remains of malt grains after mashing.
Hopping
The action of boiling the wort to give it bitterness with hops, and better stability.
Kieselguhr
Silica earth for beer filtration.
Malting
A series of steps for germinating cereals (soaking, germination, kilning) to synthesize enzymes and solubilize and degrade biological matter.
Tunnel pasteurizer
Beer is pasteurized in the bottle by spraying it with hot and then cold water from different baths.
