Use of industrial gases in the food industry

Gases used in contact with products in the food industry fall into three regulatory categories:

• additive gases for modified atmosphere packaging, aerosol propulsion and pH modification;

• ingredient gases (CO ₂ for soft drink production);

• technological auxiliary gases: mainly cryogenic fluids, but also gases that come into contact with products during the process and are not present in the final product when it is marketed.

Gases used for modified atmosphere packaging are considered as additives (European Parliament Directive 95/2/EC of February 20, 1995, published under no. L61/1).
