The selection of bioprotective strains is based on the integration of bibliographical data, experimental data under laboratory conditions carried out in culture media (in vitro) or directly on food matrices (in situ). More recently, the study of genomic sequences by bioinformatics (in silico) has made it possible to predict phenotypic characteristics and to guide this selection.
