History shows us that the development of traceability and its various forms has in fact completely transformed the identity of the eater (the consumer becomes, in spite of himself, an expert in "traceable and traced" consumption) and of what is eaten (beef is no longer just any beef).

Beyond this twofold transformation in the appearance of things and people lie more subtle shifts in the distribution and assessment of risks. These shifts point to at least three dangers of a non-cautious use of the "precautionary principle".
