Biofilm and pilis – Micro-organisms can colonize all surfaces of a piece of equipment, as long as they are in the presence of water and a few nutrients. They then form biofilms that are difficult to remove, due to their strong adhesion and resistance to cleaning and disinfecting products. Some micro-organisms are able to develop "pilis" (plasmid-encoded protein structures) or secrete capsular-type polymers, which form a complex associating soil, support and micro-organisms. If you act directly with a disinfectant, you run the risk of running up against this biofilm. The best way to eliminate biofilms is to use a mechanical effect during cleaning, in the form of powerful, prolonged injections.
