4. Conclusion
Capillary electrophoresis is the technique of choice for studying the kinetics (activity, inhibition) of many types of enzymatic reactions of interest in the cosmetics, agri-food and therapeutic fields. Several approaches can be envisaged, demonstrating the flexibility of CE-based enzymatic assays. As such, the number of reagents involved, their availability, price and size need to be taken into account in order to choose the appropriate type of assay. The methods developed are reagent-saving, rapid and ideally suited to complex samples (cell content, plant extracts, etc.).
