Complex colloidal systems carrying drugs, enzymes, proteins, cells or functional particles such as magnetic or fluorescent nanoparticles offer a wide range of potential applications in the biomedical, materials, cosmetics and food sectors. The characteristics of these systems, such as monodispersity, the ability to encapsulate active ingredients and release them in a controlled manner at the desired moment, and the traceability of their trajectory, are crucial if they are to perform their function(s) effectively. Microfluidic technology, which can produce emulsions of various morphologies with precisely controlled size, has been widely used to generate a variety of colloidal systems, such as microcapsules with polymerized shells, microgels and vesicles.
