2. Enzymes of interest to the paper industry

Enzymes are proteins that catalyze metabolic reactions. The enzymes used in wood bioprocessing are naturally produced and secreted by microorganisms that grow on wood, such as the fungi and bacteria mentioned in the previous paragraph (§ 1 ). Thanks to their highly specific catalytic activity, they can be used to replace certain chemicals.
