5. Unusual emulsions
So far, we've only mentioned simple emulsions, comprising a fatty phase and a polar phase, with a white appearance and a dispersed phase volume fraction not exceeding 40%. There are, however, more complex systems whose specific properties can be actively sought by formulators.
5.1 Transparent emulsions
Transparent emulsions are easy to produce, taking on the appearance of a viscous solution or transparent gel. The white appearance of emulsions is the result of the scattering of incident light.
