1.1 Definition

In this section, we will focus on

Chipolatas (or "godiveaux") are 12 to 18 cm long, stuffed with sheep's menu (18 to 26 mm), and usually marketed fresh (short shelf-life). These are pure pork products (50 to 60 g).

Merguez, preparations essentially based on lean beef and/or mutton and pork, embossed with mutton; the fat of these same species is also used. Real merguès (or merguez) are made exclusively from beef and/or mutton (no pork). They are sold fresh (50 to 60 g).
