Food systems—that is, the ways in which humans organize themselves, in space and time, to produce and consume their food —must transition toward greater sustainability. The key sustainability challenges to be addressed are summarized in the figure 1 , which specifies at which stage of the chain, from production to consumption, these challenges are most closely linked.
