Nutrition research can be defined as the study of the interactions between food (as a total diet, food components, and diets) and physiology on the scale of an individual (from the molecular level to the whole body) or a population. It covers the impact of diet on biological functions, health status or the development of pathologies. Improving our knowledge of the relationship between diet and physiological changes, in particular those associated with the development of chronic diseases and their consequences, is essential.
